His eyes were wandering to the muffin racks. There were bran raisin and oatmeal applesauce allspice waiting to go into the cases up front.
“Have one for the road,” I said.

If I had taken a look at this list at the start of this mad endeavor, I wouldn’t have thought that the baked good featured on my (second) birthday would be Bran and Raisin Muffins. Easily the least cool, least decadent of all the possible pastries. Bran and Raisin Muffins aren’t even cool next to other muffins. But so goes (my) life. And the force that is Muffin Season cannot be denied. Besides–these are pretty good for bran muffins.

Ingredients

Dry IngredientsBran and Raisin Muffin

  • 1 cup (125 grams) flour
  • 1 1/2 cup (200 grams) wheat or oat bran
  • 2/3 cup (133 grams) brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 teaspoon vanilla
  • 1 cup buttermilk*
  • 1 egg
  • 1/2 cup (75 grams) raisins
  • 1 tablespoon water or rum

* Buttermilk Substitute: 1 cup milk and 1 tablespoon vinegar + 5 minutes

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

In a small bowl, soak raisins in 1-2 tablespoons of water or rum. Gently stir to coat, then let sit.

Mix together the bran and buttermilk in medium-sized bowl (you’ll be adding the rest of the wet ingredients to the bowl so plan size accordingly). Let stand for 10 minutes.

While waiting, mix wet ingredients (oil, egg, and vanilla) in the measuring cup.

Sift or whisk the dry ingredients (flour, brown sugar, baking soda, baking powder and salt).

After the 10 minutes are up, mix the wet ingredients into the bran/buttermilk mixture.

Pour the wet mixture into the dry and stir until just blended. It can even be slightly under-mixed as we’ll be folding the raisins in later.

Drain the remaining liquid from the raisins and them into the batter.

Spoon batter into prepared muffin tins.

Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
